Located in south west France, bordering Spain and the Pyrenees Mountains to the South and the Mediterranean Sea to the East and the southernmost extension of the Massif Central can be found in the north. To the west of the region are the Grands Causses, deep canyons above which lie limestone plateaus. The Montagne Noire, Corbière hills and the Cévennes are all areas of dramatic hills, mountains and deep river gorges. The region’s Mediterranean coast is an area of river deltas and coastal plains. The climate in this region is excellent and is rich in wildlife including the western side of the Camarague wildlife reserves. This area is also steeped in history and possesses a number of World Heritage sites including Carcassonne, the Canal du Midi, and the Pont du Gard. There are also cathedrals, châteaux and the famous mountain fortresses popularly known as Cathar Castles. The local cuisine and specialities include Thau Basin oysters, the small pâtés of Pézenas, codfish brandade, anchovies gratinés with herbs, and tuna à la catalane. Favourite desserts are apricot tarts, Limoux king cake, the croustade languedocienne, crème catalane, les grisettes de Montpellier (honey and licorice candy), and rousquilles.
