
Tuscany extends over the heart of central Italy. This region is very varied with hills and vast plains and imposing mountainous massifs dominated by the ridges of the Apennines and by the summits of the Apuan Alps. The extinct volcano, Mount Amiata, stands between the provinces of Siena and Grosseto. The Tuscan coastline is more than 300 km long and has rocky coasts and headlands alternating with long stretches of beaches backed by pine woods. In the South of Tuscany is the Maremma area. This wild, unspoiled area is protected by Nature Reserves and the islands of Capraia, Elba and il Giglio are nearby.
As well as the beauty of its landscape Tuscany is famous for the works of art contained within its cities. Tuscany has six locations which are on UNESCO’s list of World Heritage sites - Florence’s historic centre, Siena’s historic centre, Pisa’s cathedral square, San Gimignano’s historic centre, Pienza’s historic centre and the entire Val d’Orcia. Florence, Siena, Pisa, Lucca, Pistoia, Prato, Massa, Arezzo, Grosseto, Livorno are the capitals of the provinces.

Tuscany is renowned for its salt-free bread, which is the ideal companion to the many savoury salamis and soppressata, prosciutto ham and cheeses; bread is also the main ingredient of famous dishes such as "ribollita", a vegetable soup, "panzanella", a bread-based salad, and "fettunta", toasted bread with olive oil. Among the pasta dishes: pappardelle pasta with hare ragù, tomato pappa, black rice. Also known for its fish Pisan cèe (new-born eel) and fish soup caciucco. Other soups found here are ribollita soup, bean and lard soup or spelt soup. Deserts of the area include cenci, panforte and cantucci and the wines produced here are the famous Chianti.
