The Franche-Comte is on the eastern side of France and borders with Switzerland. It is famous for its abundance of game such as wild boar, hare, rabbit, deer, partridge, pewee, and plover. The rivers team with the region’s most prized gastronomic specialties, trout, crawfish, pike, eel, lamprey, carp, and shad. Wines of this area include Vin Jaune, Vin de Paille and Macvin du Jura. The regional cheese selection includes bleu du Haut-Jura, Vacherin, Cancoillotte, Comté, and Emmental. For the sweet tooth, the region has specialties such as brioches, spice bread, galettes, crêpes and beignets.
